A couple weeks ago I did my last pop up of the spring “season”. I did four in April and May and am now on an extended summer break until pop-up resumes again in August.
On the last pop-up weekend I had the usual four pastries in the box. I always have a mini cake, a cookie, a bun and then something iconically Swedish or American. The mini cake of the week was an extra virgin olive oil cake with mascarpone mousse and passion fruit curd. Boy, was it popular! I mean the mini cakes are always everyone’s favorite but this one was so summery and light. I loved it, the people loved it and I hope you will too! Below is the recipe for paid subscribers.
