Hey my dudes!
Keeping it short and sweet, this week’s recipe is PB&J thumbprints and I love them so much. When trying to come up with ideas for my weekly pastry box (you can follow that journey here: Bageriet Lördag), I want pastries that represent both the American and Swedish parts of me.
The idea first came from Swedish hallongrottar.
Hallongrottar are raspberry thumbprints, and while we have jam thumbprints in the States too, I feel like they’re a bigger deal here in Sweden.
A bakery I used to work at here in Stockholm, Lillebrors Bageri, had the most incredible hallongrottar. Their recipe has formed the base of mine.
The cookies are made with einkorn, a very, very old type of grain. This gives them a deeper flavor and more interesting texture. You could of course skip it and just use regular flour, but I think the einkorn really gives it that extra somethin' somethin'.
The peanut butter gives them that “American” flavor and rhubarb got added to the raspberry jam simply because I already had it at home!
