Hey my dudes,

This week is a short one as I’m in the middle of prepping for the first week of my pop-up bakery: BAGERIET LÖRDAG!!

The short and sweet of it is that I have launched a pop-up bakery concept from my kitchen here in Stockholm. It’s called Bageriet Lördag, which means “The Saturday Bakery” in Swedish. Once a week, I release orders, and people prepay for a pastry box. Each box contains four pastries that will rotate with the seasons and are inspired by the Swedish baking tradition.

I opened orders this past Monday and completely sold out in just 50 minutes. To say I am over the moon is an understatement!!

Now I have to work my little butt off getting the boxes together. I’ll be documenting/vlogging the whole thing on Instagram and TikTok, so if you’re interested, you can follow me over there.

If you live in Stockholm and want to order a box in the future, you can follow the bakery on Instagram as well.

For those who don’t live in Stockholm and will probably never visit, I’ll be posting some of the recipes here for paid subscribers.

This week’s recipe is kanelbulledrömmar, which are cinnamon bun-flavored “dream” cookies. Drömmar, which means “dreams” in Swedish, are classic Swedish (duh) cookies that are crunchy but mostly crispy and get their unique texture from the use of baking ammonia. They are, quite literally, dreamy! I tested them last week, and I am so happy with how they turned out!
